Smoked Meat (Pork)
5 lbs pork shoulder or butt, cut into long strips cut against grain.
2 cups shoyu
1 cup sugar
1 cup water
As much minced garlic as you desire
A little bit of minced ginger
Sriracha or sliced chili peppers
(you can double this marinade for better coverage)
Marinate for 2-3 days, stirring at least twice a day
Hang if you have meat hooks (some people use paper clips).
Smoke for several hours.
